A minor revolution?

French gastronomy has been suffering of late. The exodus of chefs to London hit the capital a few years ago, and innovation à la Heston Blumenthal has been derided by French gastronomic world as "too innovative". Now Michelin itself, for years the standard bearer of quality cuisine, is taking the blows.

Two major chefs have recently sent back their Michelin stars in a firm rebuke to the "red bible". Alain Senderens, an internationally renowned chef from the brasserie of his own name at the Place de la Madeleine, refused to accept his Michelin stars, and has started a minor revolution.

While the prices may be out of reach of most average wage-earners in Paris, Senderens has managed to cut his to almost a quarter of their original values - from 400 to 100 euros. His theory is simple - "keep it simple". He has done away with napkins, replaced the expensive Bresse chicken with a lesser-known poultry, and even brought back the humble sardine. The result is a raving success - a change that even Gordon Ramsay would be amazed at.

Indeed, many chefs are now aiming at a younger clientele. The magazine Omnivore has claimed that a younger generation should be targeted by chefs, as opposed to an older, more nostalgic generation. It insists on a simplified approach to innovation, with lower prices, and a more "bistro" style. Indeed, it has called it "bistronomie".

It seems, then, that French cuisine is determined to reinvent itself. Having suffered at the hands of globalisation, it is essential that a younger generation take on the traditions of previous generations, and the approach of chefs like Senderens is only to be admired. After all, he could have gone to London instead.

Quite what Michelin will make of it all, though, is another question.

Si quieres te lo traduzco (exceptuando términos culinarios) para que lo pongas en español.
Aparte de eso, creo que la gente joven (me incluyo aún) no come en retaurantes porque dan una impresión de ser muy costosos por los aires de lujo y confort que algunos tienen. Además, hace falta que la gente pruebe para saber si le gusta otra comida diferente al menú ejecutivo hecho a mandarriazos o la comida rápida, por muy ligera que traten de hacerla.
Cónchale, nadie quiere ir con la novia a gastarse la quincena en una cena (dinero ganado con esmero) y quedar como ignorante si el mesero te recomienda un vino o una entrada. Se puede hacer el esfuerzo de prepararse y conocer, pero con precios de hotel 6 estrellas pocos pueden.
Para comer bien no hay que comer caro, si no saber buscar los productos más frescos y mejor preparados, manteniendo su identidad. Pero si se ponen los restaurantes a querer sacar en dos días todo el mes sólo los acomodados seguirán comiendo en ellos.
Bueno, creo que estoy siendo un poco repetitivo, así que me retiro, deseando lo mejor para ti.
